This is not your everyday side salad. With roots from Ethiopia, mango salad is fresh and delicious enough to stand alone, but also complements many other African dishes.
Mango is grown all over Africa, and Nigeria is the continent’s top producer of the fruit. Pairing mango with pineapple, and cooling mint is a perfect combination- and very easy to make. Not to mention, this fruit is naturally hydrating, and contains Vitamin A (hello, glowing skin) making it perfect for hot Summer afternoons. Ingredients:
- 1 large mango, diced
- A handful of mint leaves, finely chopped
- Palm sized pineapple, sliced
- 5 passion fruits
- 3 tablespoons of sugar
- 3/4 cup of water
Directions:
In a large pot (sufuria), add water, sugar and passion fruit pulp. Mix and allow it to cook for 10-15 minutes until it thickens. Set aside and allow to cool to room temperature.
Chop up mango, pineapple and mint into small cubes, and add these to a serving bowl. Toss it all together. Then, drizzle the passion fruit syrup over the fruit, lightly mix then serve.
